Biochemical properties

Caseins can be classified into two families; the first contains the αs1, αs2, and β-caseins, and the second groups the κ-caseins (AllFam:AF085). The α and β-caseins are hydrophobic proteins that are readily precipitated by calcium [1].

Allergens from this family

Allergenic members of this family include major milk allergens from cow, sheep and goat [2].
